Male’, Maldives, 3rd April 2024 – In a nod to the global trend towards vegetarian and health-conscious cuisines, Atmosphere Kanifushi has announced an exciting ‘summer special’ event leading up to the highly anticipated Just Veg Festival scheduled for Q3 2024. Renowned Italian Chef Fabrizio Marino will headline the culinary extravaganza from the 21st to the 26th of June 2024 at the esteemed Just Veg specialty restaurant.

Guests at the event will be treated to an exclusive five-course dinner hosted by Chef Fabrizio, which will be complimentary with the Kanifushi PlanTM for pre-booked guests. The menu promises to be a culinary journey featuring two new recipes, including a coconut-milk-based creation bursting with flavors, and a progressive dish that ingeniously blends Indian and Italian cuisines. Additionally, due to popular demand, the fresh smoked cottage cheese and vegetables dish, ‘Bite By Bite,’ will make a triumphant return to the menu. Many of the ingredients used in these delectable dishes, from coconuts to herbs, are meticulously handpicked by the chefs from the restaurant’s own garden.

Raman Gomathi, Director of Food and Beverage at Atmosphere Kanifushi, highlighted the health benefits of a plant-focused lifestyle, emphasizing the restaurant’s commitment to introducing meat alternatives to travelers. He stated, “Studies have shown that a plant-focused lifestyle can help in reducing health risks. At Just Veg, there’s a conscious effort to introduce meat alternatives to travelers, from protein-based dishes using cottage cheese and legumes to greens and the use of truffles for a touch of indulgence.”

Chef Fabrizio Marino, the creative force behind the acclaimed vegetarian restaurant Maggese located in the Tuscany countryside, has been collaborating closely with the culinary team at Kanifushi for the past three years. He brings his signature artistic flair and innovative approach to vegetarian cuisine to the Just Veg festival, ensuring guests are treated to a unique and flavorful dining experience.

Commenting on the special summer edition, Chef Fabrizio expressed his excitement, saying, “I’ve always pushed the boundaries; recreating sumptuous, homely favorites by choosing the finest natural ingredients and letting the fruit and vegetables speak for themselves.
