Male’, Maldives – 24th February 2026 – At the heart of the Maldives’ shimmering South Malé Atoll, Sun Siyam Olhuveli continues to elevate its culinary landscape with a refined new chapter at Milano, its signature Italian restaurant. As part of the resort’s ongoing Chef Residency series, acclaimed Italian chef Francesca Gambacorta was invited to lead an exclusive residency designed to reshape and enrich the dining experience through mentorship, authenticity, and artistry.
Renowned for her emotionally intuitive approach to contemporary Italian cuisine, Chef Francesca views food as a narrative — an expression of memory, place, and sentiment. With a global audience exceeding 700,000 followers on Instagram, recognition among Italy’s Top 20 Food Influencers by Forbes Italia in 2021, and authorship of Semplicità Complessa — Il gourmet per tutti, she has built a reputation around the concept of thoughtful simplicity. It is a philosophy that harmonises effortlessly with the relaxed sophistication of island life.
During her residency, Milano’s kitchen evolved into a vibrant atelier of flavour and finesse. Working closely with the resort’s culinary team, Chef Francesca led immersive training sessions, interactive cooking demonstrations, and real-time service mentorship. Her focus was precise yet poetic: honour regional traditions, respect seasonal ingredients, and allow each component to speak with clarity. From patiently hand-rolled pasta to sauces rooted in Italy’s diverse culinary heritage, every detail was approached with intention.
Yet her influence extended beyond technique. She instilled a mindset — one where every plate carries emotion and balance, where timing and restraint are as vital as creativity. This philosophy now shapes Milano’s refreshed menu, reflected not only in its flavours but in the rhythm of preparation and presentation.
Guests were given a taste of this transformation on 14 February, when Chef Francesca headlined a special Valentine’s Day dinner. Blending celebration with live culinary theatre, the evening brought her signature style directly into the flow of service, offering diners a rare opportunity to experience her craft firsthand.
Today, Milano exudes renewed confidence and character. Handcrafted pastas, delicately layered sauces, and beloved Italian classics arrive with relaxed authenticity — grounded in tradition yet subtly infused with island nuance. It is Italian dining reimagined, shaped by mentorship and delivered with heartfelt warmth.
