Ba’theli by the Reef: Milaidhoo Maldives Reinvents Fine Dining with Authentic Maldivian Communal Flavours

Male’, Maldives – 2nd March 2026 – Set amid the crystalline waters of the Baa Atoll UNESCO Biosphere Reserve, Milaidhoo Maldives unveils a reimagined chapter in its celebrated culinary story: Ba’theli by the Reef, the world’s only Maldivian fine-dining restaurant set atop traditional dhoni boats, now offers an intimate, family-style dining experience inspired by local island traditions.

Poised gracefully above the turquoise lagoon on three handcrafted dhonis, Ba’theli has long honoured the Maldives’ seafaring heritage. For over 5,000 years, these islands thrived as a crossroads of the ancient spice routes, linking Indonesia, India, and Arabia in a vibrant exchange of cinnamon, cloves, cardamom, and other precious spices. That rich legacy continues to inform Ba’theli’s culinary identity, now expressed through a more communal and immersive approach that invites guests to dine as islanders do — sharing, passing plates, and savouring every moment together.

“At Milaidhoo, we believe the most meaningful way to experience the Maldives is through its flavours,” says General Manager Paul van Frank. “By embracing a communal style of dining at Ba’theli, we invite our guests to connect more deeply — passing plates, sharing stories, and discovering our culture as we do.”

Under the guidance of Sous Chef Nasreena “Natti” Ali, whose expertise in traditional Maldivian cuisine ensures authenticity and depth, the menu balances heritage with refinement. Signature highlights include Fihunu Bodu Ihi, grilled coral lobster sourced from local fishermen and paired with aromatic curry crafted from leaves grown in the resort’s Chef’s Garden, and Dhivehi Raha, a delicate assortment of Maldivian sweets served with screw pine ice cream made from the rare kashikeyo fruit.

Central to the dining experience is the Malaayfaiy, an intricately lacquered wooden serving dish traditionally reserved for festive gatherings. Guests enjoy rice specialities such as Mas Bai (smoked tuna rice), Aafalu Bai (apple rice), Barabo Bai (pumpkin rice), and Falho Bai (papaya rice), complemented by Garudhiya tuna broth, Roast Paan, and vibrant satani salads — a true celebration of generosity, flavour, and community.

As the sun sets and golden reflections dance across the lagoon, dining at Ba’theli becomes a living expression of Maldivian culture — intimate, authentic, and quietly luxurious.

Reaching this serene adults-only retreat is effortless: a scenic 35-minute seaplane flight from Malé, or a short domestic transfer followed by speedboat. Upon arrival, guests are welcomed by dedicated Island Hosts, guiding bespoke experiences from snorkelling the vibrant house reef to private sandbank picnics and overwater spa rituals. At Milaidhoo, luxury is reimagined not only through surroundings, but through moments of shared discovery, where flavours, fellowship, and the rhythm of the tides create memories that linger far beyond the final course.
